Our Coffee.

As one of our core values states, we aim for nothing short of excellence. This value touches every detail of our coffee supply chain, starting with the farmers, and their practices, to export and roaster partnerships.

Our Farms.

We are currently working with 70 smallholder farmers located in Myanmar’s Magway state, bordering Rakhine State, at an elevation of over 1,200masl. We choose to use agro-farming techniques that keep the ancient forests in tact while simultaneously providing shade for our coffee trees. The soil is measured to be at PH7, and the surrounding forests help maintain the soil’s nitrogen level and other nutrients. We only use organic fertilizer to keep our soil healthy, and do not use pesticides on our trees. We farm the Catimor varietal of Arabica coffee. When it comes to harvest, our farmers only pick ripe cherries which ensures the best flavor. This is more labor intensive and means trees are harvested several times in a season.

Our Processes.

The farmers bring their cherries to our central mill on the same day that they are harvested. The cherries are immediately weighed and the farmer then receives his wages. After weighing we float the cherries in a tank of water. Here the under ripe cherries are easily removed since all the cherries with the proper density sink.

From the tank our cherries are spread out on raised drying beds where they are carefully sorted, and slowly dried to the optimal measurement of 10-12% moisture content. When the cherries are dried they are sent to the hulling machine where the fruit is mechanically removed from the bean. At this point the coffee is again hand sorted to remove any defect, leaving only the absolute best of the crop to be exported.

While the harvest is completed and while the cherries are being shipped we use GrainPro bags which ensure freshness, and keep the beans from deteriorating until they arrive at the roaster. Currently, we are only offering the highest quality natural/dry processed coffee for export. As a new specialty coffee company we have also been exploring our capacity to produce washed and honey processed coffees.
